Astronauts Pack Southern Comfort for Moon Mission

Astronauts aboard the Artemis II mission are set to enjoy a 10-day journey to the moon with a selection of familiar Southern food favorites. The extensive menu features 189 unique items, with a special emphasis on comforting, shelf-stable options chosen by the crew themselves. Among the highlighted dishes are barbecued beef brisket, creamy macaroni and cheese, and sweet cobbler.

To enhance flavors in the microgravity environment, where taste buds can be altered, the crew has packed five distinct types of hot sauce. Other appealing items include vegetable quiche, butternut squash, spicy green beans, and a variety of tortillas. These meals are prepared using rehydratable food pouches and a specialized food warmer, ensuring safety and convenience in space.

Space food preparation prioritizes minimizing crumbs and spills. Most meals are designed to be bite-sized or sealed in pouches. Astronauts use Orion's potable water dispenser to rehydrate their food and beverages, making their culinary experience as comfortable as possible while away from Earth.
