Last month, Delhi's food enthusiasts were treated to a taste of authentic Japanese cuisine as renowned chef Yoshihiro Murata brought his culinary expertise to the city. The Japanese Food Festival, organized by the Embassy of Japan, featured a delectable spread of traditional Japanese dishes, including steamed shiitake rice wrapped in bamboo leaf, simmered eggplant, cherry blossom sushi, and duck roast.
Speaking about the philosophy behind his food, Chef Murata emphasized his desire to introduce Indian people to the concept of umami, the fifth basic taste responsible for enhancing and balancing natural flavors. He noted that Indian cuisine already has a lot of umami, citing the similarity between rasam and Japanese miso soup. Through the use of dashi, the traditional Japanese stock, Murata aimed to showcase how a wide variety of healthy, low-oil dishes can be enjoyed.
The event was attended by food bloggers and chefs, who were eager to experience the unique flavors of Japan. Japanese Ambassador ONO Keiichi expressed his gratitude to Chef Murata, stating that Japanese food is not just about the cuisine, but a reflection of the country's rich culture, which has been recognized worldwide.
