Raw Meat & Flies: Michelin Star Kitchen's Shocking Rating
12 Feb
Summary
- Inspectors found raw meat next to ready-to-eat items.
- A dirty knife and an accumulation of flies were noted.
- Head chef cited misunderstandings of raw ingredient usage.

Ynyshir Restaurant, a prestigious two-Michelin star venue in Wales, was recently issued a one-star hygiene rating by council officials. Inspectors cited major concerns including uncovered raw meat stored improperly next to ready-to-eat items, a dirty knife, and an accumulation of flies. Management of food safety and facility cleanliness were deemed in need of 'major improvement'.
Head chef Gareth Ward has pushed back against the findings, suggesting inspectors did not fully understand the use of raw ingredients common in fine dining, such as sashimi and dry-aged fish. The restaurant has stated it takes the outcome seriously and has already addressed all identified administrative and procedural points, requesting an early reinspection.
Despite the criticisms, Ynyshir Restaurant maintains it operates at the highest international standards. The report also noted issues with menu information accuracy and highlighted raw lobster as a 'high-risk activity' that should cease immediately. The restaurant disputes the hygiene assessment, with Mr. Ward asserting their kitchen is 'immaculate' and that laboratory testing of their fish came back 'absolutely clear'.
