Guernsey now boasts its first Michelin-starred restaurant in more than ten years, with Vraic receiving a prestigious one-star rating. The establishment, which opened in July, is helmed by Welsh chef Nathan Davies and his wife, operations manager Hollie Davies.
The Michelin Guide recognized Vraic for its "stunningly located" setting and "cooking to match," emphasizing its excellent use of the island's resources. Chef Davies expressed his gratitude for the warm welcome received in Guernsey since relocating his family and opening the restaurant.
Davies, who previously earned a star for his restaurant SY23 in Aberystwyth, relocated to Guernsey with key colleagues. He collaborated closely with local growers, farmers, and fishermen to develop Vraic's menu, showcasing the island's best ingredients.
