At a recent three-day fruit festival, 75 bottles of ready-to-serve cashew apple juice, produced by Canute Aranha, sold out within just three hours. Aranha, who has been creating value-added cashew apple products since 2010, noted a significant surge in demand for his juice since last year. His brand, 'Ken's Fresh Cashew Apple Products,' has been in large-scale production since 2016.
Other vendors also showcased diverse cashew apple creations. Ashwath Hebbar presented cashew apple halwa, highlighting the suitability of yellow cashew apples for this sweeter, less tannic variety. Deepthi prepared traditional Indian sweets like ksheera and payasa using red cashew apples, employing a frying technique to reduce tannin content. Suhas Marike offered cashew apple ice cream, including a unique spicy version blended with bird's eye chili, alongside halwa and juice.
Aranha also produces cashew apple wine, a process that takes six months, as well as jam and dried fruit. The festival highlighted the growing consumer interest and innovation surrounding cashew apple products, moving beyond traditional cashew consumption.
