When white bread, both homemade and commercial, was frozen and then toasted, participants exhibited lower incremental area under the curve (IAUC) blood glucose readings compared to fresh bread.
The study, involving ten participants, highlighted a substantial 39.4% decrease in glucose levels for homemade white bread and a 26.1% reduction for commercial white bread. These results suggest that this pre-toasting freezing technique is a practical step towards better digestive health.
