Olam Exec Highlights Cashew's Untapped Potential in Food Industry

According to Dipen Joshi, the Business Head-Ghana for Olam Food Ingredients (OFI), tree nuts like cashew present significant opportunities for the food industry. Speaking at the Kaju Centennial Summit organized by the Karnataka Cashew Manufacturers' Association, Joshi highlighted that cashew is a popular ingredient due to its rich fiber, protein, antioxidant, and healthy fat content.
Joshi identified four specific portfolios related to cashew that have untapped potential - cashew milk, cheese, butter, and mayonnaise. He stated that "an innovation can be made or food industry can be started" in these areas. Beyond these, Joshi also noted that cashew can be used to make sauces and creamers, expanding its applications beyond traditional curry dishes.
Tree nuts are appealing as food ingredients because they are easy to incorporate into products, and are dairy, soy, and gluten-free. Joshi also emphasized that cashew and other tree nuts are good carriers of sweet, salty, and spicy flavors, making them a versatile confectionery partner.
