Five-Star Hotel Kitchens Sealed Over Severe Hygiene Failures
22 Aug
Summary
- Two kitchens and a bakery were sealed due to rodent and cockroach evidence.
- Food safety violations included improper storage and lack of date markings.
- The hotel operated on a state license when a central license was required.

District administration and food safety officials have sealed two main kitchens and a bakery of a five-star hotel in Indore, Madhya Pradesh. This action was taken on Thursday night after an inspection revealed significant food safety and hygiene breaches. The team, part of the Food Safety and Standards Authority of India (FSSAI), discovered evidence of rodent droppings and cockroach activity within the kitchen premises.
Among the critical violations noted were the storage of vegetarian and non-vegetarian food together, raising concerns of cross-contamination, and inadequate temperature control systems. Food items were also found without proper packing dates or batch numbers, and approximately 60 kg of non-vegetarian food was stored improperly. Additionally, the hotel was operating under a state food license, which is insufficient for a five-star establishment requiring a central license.
During the inspection, some food items unfit for consumption were destroyed on the spot. The sealed bakery was not even listed on the hotel's operating license. The duration of the sealing will depend on the hotel's compliance with the required corrective measures, as determined by the designated officer.
