Scientists have engineered a high-protein, low-glycemic index (GI) rice, a significant innovation in staple food nutrition. This 'designer rice' offers more than three times the protein of conventional grains while ensuring a low GI, beneficial for managing diabetes.
The development by CSIR-NIIST in Thiruvananthapuram, Kerala, involves a novel food-processing technique. Broken rice is deconstructed, blended with protein and essential micronutrients like iron, folic acid, and Vitamin B12, and then reformed into rice-like grains.
This process enhances the nutritional profile without genetic modification, maintaining the familiar taste and cooking characteristics of regular rice. The low GI (below 55) ensures slow energy release, preventing blood sugar spikes.
CSIR-NIIST has transferred this technology to industry giant Tata Consumer Products Limited, paving the way for its commercialization. This innovation promises to provide a more nutritious rice option for millions, potentially combating malnutrition and offering a healthier alternative to traditional staples.
