Chef Sungani Phiri is spearheading a culinary renaissance in Zambia, moving away from European influences to celebrate indigenous ingredients. His restaurant, Sungani, located in a suburb of Livingstone, offers a groundbreaking molecular gastronomy tasting menu.
Phiri's vision, inspired by a challenge from his sister, is to elevate Zambia's culinary traditions. He transforms familiar ingredients into sophisticated dishes, offering guests a connection to Zambian culture and childhood memories. The menu, which spans 14 to 16 courses, exclusively uses ingredients sourced within a 100km radius.
Launched in April 2025 with a tasting menu called 'The Rebirth,' Sungani aims to showcase the finest Zambian produce. Guests dine in Phiri's home, fostering an intimate connection to Zambian hospitality. The establishment also serves as a training ground for young Zambian chefs in indigenous cooking techniques.
Signature dishes include an avocado and cassava cone, a Zambezi River crayfish pai tee, and a mosaic of Zambezi bream. Phiri ingeniously uses dried caterpillars as a rub for steak and transforms beignets into a vitumbuwa cheesecake.
Sungani Restaurant is not just serving food; it's crafting a new narrative for Zambian cuisine on the world stage. Phiri's commitment is to present Zambia's culinary identity with reverence and innovation, fostering national pride and global recognition.
