Ted Martindale, an 80-year-old coffee shop owner from Quesnel, British Columbia, has created what he believes to be the world's largest carrot cake. The colossal confection weighs nearly 6,000 pounds and is currently under review by Guinness World Records.
This ambitious baking project was conceived to celebrate Martindale's 80th birthday on March 25. Initially, he and his wife anticipated a small gathering, but the event unexpectedly transformed into a town-wide celebration.
The construction of the cake was a significant undertaking, involving a month-long process. It required baking 432 separate sheet cakes, which were stored in a grocery store's freezer. All the icing was prepared on the day of assembly, taking approximately 14 hours and the help of 12 individuals to put the cake together.
Martindale, who has owned Granville's Coffee for 34 years, considers his coffee shop, a central gathering place, to be his main legacy. However, this enormous cake has unexpectedly brought the community together in a remarkable way.
