Starting August 1, United Airlines is set to transform the inflight dining experience for its Polaris international business class passengers. This initiative involves a new lineup of chef-driven meals available on select long-haul routes.
The airline has partnered with "Chef's Table" to bring this concept to life, engaging 11 renowned chefs. These culinary experts hail from major cities within United's global network, including Los Angeles, Newark, Chicago, Houston, Denver, San Francisco, Washington, D.C., London, São Paulo, and Tokyo.
Each meal is intentionally designed to reflect the chef's home city, offering passengers a unique culinary journey. For instance, Nancy Silverton's Los Angeles-inspired menu features burrata and beef brasato, while Fariyal Abdullahi from Newark offers chilled tomato soup and Ethiopian-coffee glazed short ribs.
These specially curated menus will be featured through September 2026. Following this period, a new selection of dishes from the same chefs will be introduced, with seasonal rotations planned into 2027. Passengers will have the opportunity to pre-order these meals up to 24 hours before departure.
To further enhance the dining experience, United will provide behind-the-scenes video content, allowing passengers to learn about the dishes directly from the chefs. This integration aims to elevate the perception of airline cuisine, making it a memorable part of the travel experience.
