The original Soban Korean Eatery first opened in Hales Corners in April 2025 and quickly gained popularity.
This expansion aims to introduce authentic Korean cuisine to a broader audience. The restaurant offers a customizable dining experience, allowing patrons to build their meals starting with a rice or vegetable base, selecting a protein, and choosing two sides. Popular items include barbecue pork, beef bulgogi, japchae noodles, and various kimchi preparations. The average meal price is around $15.
Owned by Solki Lee and Hyelim Song, Soban Korean Eatery was celebrated by the Journal Sentinel as one of the Milwaukee area's best new restaurants of 2025. Lee, who grew up in Seoul, expressed his desire to make Korean food accessible and affordable. The downtown location's operating hours will be 11 a.m. to 9 p.m., Monday through Saturday, starting April 3.
