The Saint Laurent Rive Droite boutique in Paris has been reimagined by creative director Anthony Vaccarello, revealing a sophisticated space that now includes the exclusive Sushi Park Paris. Located discreetly beneath the boutique, this new culinary venture is the first international expansion of chef Peter Park's 20-year-old Los Angeles sushi hotspot.
The subterranean restaurant features a striking design with dim lantern lighting and mahogany wood paneling, a departure from the upstairs boutique's industrial-chic aesthetic. Guests are guided down a Brutalist-style metal staircase to the omakase-only dining area, where shōji-style screens and waxed concrete walls set the mood.
Sushi Park Paris offers a daily changing selection of exquisite sushi, prepared using modern Edomae-style techniques. Key ingredients, such as tuna for sashimi, are flown fresh from Japan, while other seafood, like sea bass, is sourced locally from France. The omakase lunch menu includes signature dishes like miso-glazed black cod, elevated with French-inspired garnishes.
Complementing the sushi, the restaurant's cocktails put an inventive spin on Japanese ingredients like wasabi and shisho, often blended with French liqueurs. Diners can also opt for sake or wine pairings to accompany their meal, which concludes with delicate mochi desserts.
