Peekskill's waterfront is set to welcome three new culinary destinations, launched by Hudson Fusion Hospitality Group. Taco Station, the reimagined space of the former Taco Dive Bar, is scheduled to open on April 14. This venue will feature a railroad theme with authentic Mexican street food and an elevated cocktail program.
Following Taco Station's debut, Savia, a Colombian-focused lounge and cocktail bar, plans to open around April 21. Savia will emphasize elevated mixology with tropical flavors and serve small plates, with larger dishes to follow later in the summer.
A third establishment, an ice cream and burger spot, is also in the works and is anticipated to open in the first week of May. This venture, still awaiting a name, will offer new burger creations and feature a different ice cream supplier.
The new ownership team, comprising Jose Bustamante, Katherine Norena, Robin Urbina, and Ronaldo Ramirez, brings over 30 years of combined hospitality experience to these revitalized locations.
