High school students in Tsuruoka, Yamagata, have successfully developed an innovative protein bar named "Kinniku Kamaboko," or muscle fish cake. This unique snack is crafted from minced white fish, aiming to provide a protein-rich option for muscle building.
The project was initiated by five third-year students from Yamagata Prefectural Kamo Fisheries High School. Their inspiration came from a sumo club member's request for an easily consumable protein source between activities. The students worked with the "Ryusen Takikawa" kamaboko shop and Keio University's Institute for Advanced Biosciences.
After extensive research and development, they settled on five distinct flavors: "cocoa and nuts," "matcha and adzuki bean," "carpaccio," "spicy cod roe and cheese," and "Japanese 'shiso' basil and crunchy pickled plum." Each 60-gram bar is approximately 11 cm long and 3.5 cm wide, priced at 324 yen (about $2).
The "Kin Kama" protein bars went on sale from May 15th at Ryusen Takikawa's physical store and online shop, as well as local tourist centers. The students hope their creation will appeal to a broad audience, including those who don't typically eat fish and the elderly.
