The sudden surge of demand, which saw the restaurant's chole consumption increase tenfold within days, transformed its fortunes. What was a struggling establishment planning to shut down is now a brand with four outlets selling over 3,000 plates daily and achieving monthly sales of approximately ₹2 crore.
