Kimchi, a traditional Korean fermented vegetable dish, may play a crucial role in maintaining a balanced immune system, according to recent scientific findings. A study involving 39 overweight adults over 12 weeks explored kimchi's effects on immune cell activity.
Participants were divided into groups, with some consuming placebo and others receiving kimchi powder from naturally or starter-cultured fermented kimchi. Analysis revealed increased activity in antigen-presenting cells among kimchi consumers, aiding pathogen recognition.
The research, published in npj Science of Food, also highlighted a healthier balance in CD4+ T cells, crucial for immune defense and regulation. These findings suggest kimchi activates the immune system judiciously, responding to threats without causing unnecessary inflammation.
