Mama Tina's Gumbo, a pop-up eatery operated by Tina Knowles, faced a temporary closure during the Houston Livestock Show and Rodeo on March 16th. The shutdown stemmed from a serious customer complaint alleging they experienced severe illness, including vomiting blood, chills, nausea, and fever, after consuming the establishment's gumbo.
Inspections revealed significant violations of food safety protocols. Houston Health Department records indicated that the gumbo was prepared off-site, inadequately cooled in non-food-grade containers, and transported to an unlicensed freezer. Further issues included the absence of temperature logs and the use of unapproved food sources. Operators were reportedly cooperative with inspectors.
Following corrective actions, including education on proper food preparation, cooling, and thawing methods, and a commitment to prepare food on-site, Mama Tina's Gumbo was cleared to resume operations the following day. The eatery was scheduled to remain open through March 22nd.
