Pink Pony Soft Serve recently celebrated the grand opening of its second brick-and-mortar location in Albuquerque's Sawmill area. The new, intimate space, measuring under 400 square feet, has already seen a strong turnout from both new and familiar customers. Owner Beth Hommell expressed her delight with the positive reception during the opening weekend.
Hommell, who previously operated the business as a food truck, opened the first Pink Pony Soft Serve in Uptown in 2023. Inspired by her experience as a private chef, she created an "elevated" soft-serve experience featuring house-made ice cream, toppings, and Italian ice, all prepared with local ingredients. This new Sawmill location offers improved visibility and fits well within the historic area's charm.
The new Pink Pony Soft Serve shares its property with Mañana Taco, another venture by Nathan Mayes, which is slated to open in early July. Hommell anticipates that the neighboring businesses will complement each other. She is preparing for a bustling summer season, managing both locations with her current staff until additional help can be hired and trained. Hommell emphasized the desire for the shop to be an accessible, community-oriented destination.
