A well-known food truck franchise, Cousins Maine Lobster, is making a stop in Albuquerque as part of its New Mexico tour. The company, which gained fame after appearing on ABC's "Shark Tank," is celebrated for its Maine lobster rolls. Although headquartered in California, it sources lobster directly from Maine.
Founded in 2012 by cousins Sabin Lomac and Jim Tselikis, Cousins Maine Lobster secured a $55,000 investment from Barbara Corcoran on "Shark Tank." The venture has since become one of the show's most successful companies, surpassing $1 billion in sales as of June 2025.
The current food truck tour is a strategic move for national expansion, aiming to connect with new customers and assess growth potential. Lindsay Herberger, director of franchise development, expressed excitement about bringing the brand's energy to New Mexico.
The truck began its New Mexico journey on May 5 in Clovis and has since visited several other cities. In Albuquerque, it will be located at Brew Lab 101 on Thursday and Gravity Bound Brewing Co. on Friday, operating from 12 p.m. to 9 p.m. both days. The menu includes lobster rolls, tacos, grilled cheese, and clam chowder.
Following its Albuquerque visit, the truck is scheduled to stop in Rio Rancho on Saturday and Santa Fe on Sunday, further expanding its reach within the state.
