Chi-Chi's Mexican Restaurant Reopens First Location in 20 Years

In a move that is sure to excite fans of classic Mexican cuisine, the iconic Chi-Chi's restaurant chain is set to reopen its first location in over 20 years. The new restaurant is slated to open on Monday, October 6th, in St. Louis Park, Minnesota, bringing with it a "refreshed design" and a mix of original and new menu items.

Among the new offerings are the restaurant's Quesabirria Tacos, served with a consommé dipping sauce, as well as a Manchego Burger made with grilled angus beef, manchego cheese, pico de gallo, avocado, and chipotle mayonnaise. According to the company's announcement, these additions are part of an effort to bring back the "food, energy, and fun that people love, now with a fresh twist for a whole new generation."

The return of Chi-Chi's comes over 20 years after the chain filed for bankruptcy in 2003 and closed its last U.S. restaurant in 2004. The company has since reached an agreement with Hormel Foods, the Minnesota-based global food company that owns the Chi-Chi's trademarks, to use the name and open future locations.

Michael McDermott, the son of Chi-Chi's co-founder Marno McDermott, expressed his excitement about the brand's comeback, stating that the company is "back stronger than ever" and ready to welcome both familiar and new faces to experience the revived Chi-Chi's.
