Undeterred, Endo initiated a trip across Japan to reconnect with his essential suppliers and reaffirm his life's work.
His journey took him from meeting his rice meister in Fukushima to visiting a traditional vinegar brewery in Tokyo. He observed the meticulous work at Toyosu market, engaging with tuna brokers like Hicho, a family business since 1861. These encounters highlighted the challenges facing the industry, including warming waters and stock depletion, yet underscored the enduring value of relationships.
Endo also visited ceramicists and revisited his family's roots in Yokohama, where his father and grandfather ran sushi restaurants. His mother's strong influence on his upbringing, emphasizing discipline and precision through various arts, was evident. Despite facing familial opposition to his culinary path, Endo pursued his dream, eventually training under masters in Kyoto and Nagoya.
His career in London began at Zuma, where he met Rose Gray of the River Café, who inspired him to focus on British produce and aim for a Michelin star. After leaving Zuma, he established the Rotunda. The fire, while devastating, did not extinguish his spirit; with support from his suppliers and team, he began rebuilding, finding solace and strength in his craft and relationships.
